鯇魚腩 600克 Green carp belly 600g
鮮冬菇4隻 80g Mushrooms 80g
冬筍 80克 Winter bamboo shoot 80g
豆腐卜70克 (6件) Tofu puff 70g (6 pcs)


配料 Garnish

薑片 60克 Ginger slices 60g
蔥80克 Spring onion 80g
乾蔥頭 40克 Shallots 40g
紅椒 1隻 (可以辣) 1 Red chilli (spicy/not)
洋蔥 半個 100克 Half an onion 100g

調味料 Seasoning

生抽 40克 Soy sauce 40g
老抽 10克 Dark soy sauce 10g
麻油 8克 Sesame oil 8g
胡椒粉 0.5克 Ground pepper 0.5g
鹽 2克 Salt 2g
紹興酒 50克 Shaoxing wine 50g
冰糖 10克 Rock sugar 10g
生粉 20克 Potato starch 20g
生粉水: 10克生粉加30克水 (埋芡用)
Sauce thickener: 10g potato starch mix with 30g water

清水 500毫升 Water 500ml
油 200毫升 Oil 200 ml
